Add the Jell O powder to a large bowl
Pour in 1 cup boiling water and whisk until completely dissolved
Let the mixture cool for about 10 to 15 minutes so it is warm, not piping hot
Whisk in 1 cup Greek yogurt until smooth and creamy
Fold in the blueberries
Pour into serving cups or a serving dish
Refrigerate for 2 to 4 hours until thick and set
* Replacing the cold water with Greek yogurt makes it much creamier and boosts the protein.
* The texture is similar to a fluffy cheesecake mousse or a light no bake cheesecake filling.
* For the fluffiest version, use a hand mixer to whip the yogurt into the cooled Jell O mixture for 1 to 2 minutes before chilling.
If using 1 cup of nonfat Greek yogurt, the whole batch is typically around 20 to 25 grams of protein and remains relatively low in calories, making it a great high protein snack or dessert.
