Make the Coca-Cola Glaze: In a skillet or saucepan over medium heat, combine the Coca-Cola, soy sauce, brown sugar, and red pepper flakes.Bring to a simmer and cook for 6–10 minutes, stirring occasionally, until slightly reduced and syrupy
Marinate the Spam: Add the cubed Spam directly into the glaze.Toss to coat thoroughly and let it sit for 10–15 minutes to absorb flavor
Skewer the Spam: Thread the marinated Spam cubes onto skewers, leaving a little space between each piece for even cooking
Cook the Skewers: Heat a flat top griddle or skillet over medium-high heat.Cook the skewers for 6–8 minutes, turning occasionally, until caramelized and lightly crispy on the edges. Grill Option: Cook over medium heat on a grill for the same amount of time, turning frequently for even char and caramelization.
Prepare the Eggs: In a separate pan, fry eggs to your preferred doneness (sunny side up recommended for a runny yolk).
Assemble: Serve the skewers over a bed of rice.Top with a fried egg, sliced green onions, and an optional drizzle of extra glaze
Pro Tips
* Let the glaze reduce just enough to coat the back of a spoon. It will thicken more as it cools.
* Don’t overcrowd the skewers, this helps get that crispy, caramelized exterior.
* For extra flavor, brush additional glaze on the skewers while cooking.
