Remove the rotisserie chicken from the Costco bag and place it on a cutting board
Shred the chicken using two forks or your hands, removing any bones or excess skin if desired
Return the shredded chicken back into the original Costco chicken bag with the juices still inside
Add the hot cooked white rice directly into the bag
Season with salt, black pepper, and garlic powder
Carefully mix everything together inside the bag so the rice and chicken absorb the flavorful rotisserie juices
Scoop the chicken and rice mixture into bowls
Drizzle with Sriracha Mayo and top with fresh chopped scallions
In a small bowl, add the mayonnaise and sriracha
Whisk until fully combined and smooth
Add the lemon juice, garlic, salt, and black pepper
Whisk again until creamy and evenly blended
Taste and adjust seasoning or heat as desired
Serving Suggestions
Use as a dipping sauce for chicken, fries, or vegetables, spread on sandwiches and wraps, or drizzle over rice bowls and stir fry dishes.
Storage
Store in an airtight container in the refrigerator for up to 5 days.
