Make the Russian Dressing In a medium bowl, combine the mayonnaise, ketchup, chopped pickles, apple cider vinegar, paprika, garlic powder, salt, and black pepper.Mix until smooth and fully combined. Refrigerate for at least 15 minutes to allow the flavors to develop
Build the Sandwiches Spread a generous layer of Russian dressing on one side of each slice of sourdough bread.Layer the turkey onto four slices of bread. Top each sandwich with 2 slices of Swiss cheese.Place the remaining slices of bread on top, dressing side facing inward
Butter Fry the Sandwiches Heat a large skillet or griddle over medium heat.Spread butter on the outside of each sandwich. Place the sandwiches butter-side down in the skillet and butter the top sides.Cook for 3 to 4 minutes per side, pressing lightly with a spatula, until the bread is golden brown and crispy and the Swiss cheese is fully melted
Serve Remove from the skillet and let rest for 1 minute before slicing.Serve immediately with extra Russian dressing for dipping, along with pickle spears, chips, or fries
Pro Tips
* Use freshly sliced deli turkey for the best texture and flavor.
* Cover the skillet for the final minute of cooking to help melt the Swiss cheese faster.
* For extra crunch, add a few pickle slices inside the sandwich before grilling.
* A cast-iron skillet creates the crispiest golden crust.
