Preheat your oven or air fryer according to the curly fry package directions.
Cook the curly fries 3–5 minutes longer than the package suggests, or until deeply golden brown and extra crispy. Allow them to cool for 5 minutes.
While the fries cook, prepare the dressing. In a large mixing bowl, combine mayonnaise, yellow mustard, pickle juice, garlic powder, onion powder, paprika, salt, and pepper. Mix until smooth.
Roughly chop the cooled curly fries into bite-sized pieces and add them to the bowl.5. Add the cheddar cheese, bacon, green onions, and diced pickles. Gently fold everything together until evenly coated.

Refrigerate for 15–20 minutes to allow the flavors to meld while maintaining some of the fries’ crisp texture.
Garnish with additional bacon, green onions, and parsley before serving.
The secret is cooking the curly fries longer than directed. The extra crunch helps them hold up to the dressing and creates a texture somewhere between loaded potato skins and classic potato salad.
