Prepare the Bread Slice the grinder roll lengthwise, leaving it hinged if desired. Hollow out some of the soft interior from both halves to create a deeper cavity. This helps hold more filling while improving the bread-to-filling ratio.
Make the Grinder Salad In a large bowl, combine the shredded lettuce, red onion, tomato, cucumber, and diced pickles. Add the mayonnaise, Italian dressing, garlic powder, salt, and black pepper. Toss until everything is evenly coated and chilled.
Build the Sandwich Spread mayonnaise over the bottom half of the hollowed-out bread. Layer with:* Ham* Pepperoni* Provolone cheese
Toast Place the sandwich open-faced under a broiler or in a 375°F oven for 5–8 minutes, just until the provolone is melted and the bread is lightly toasted.
Finish remove from the oven and generously pile the chopped grinder salad over the melted cheese. Spread a thin layer of mayonnaise on the inside of the top half of the bread, then close the sandwich.
Serve Slice into portions and serve immediately while the bread is warm and the salad is cool and crisp.
Hollowing out the bread lets you pack in significantly more meat, cheese, and grinder salad without making the sandwich overwhelmingly bready. Chilling the salad for 10–15 minutes before assembling also gives the flavors time to meld for an even better bite.
