Marinate the Prime Rib: Place the prime rib into a food safe bucket or large container.In a food safe bucket, whisk together:* Whole milk* Melted butter* Jarlick* Dan-O’s OriginalPour the mixture over the roast until fully submerged. Using a meat injector, inject the roast all over in random spots with about 1 cup of the marinade mixture. Hit multiple depths and angles throughout the roast for maximum flavor. Cover and refrigerate overnight, ideally 12 to 24 hours
Prep the Roast: Remove the prime rib from the marinade and pat completely dry with paper towels.In a small bowl, mix together:* Mayo* Dijon* Dan-O’s PrimoSpread the binder evenly over the entire roast. Let the roast sit at room temperature for about 45 minutes before cooking
Roast the Prime RibPreheat oven to 250°F.Place the prime rib on a wire rack over a baking sheet or roasting pan. Roast low and slow until internal temperature reaches:* 120°F for rare* 125°F for medium rare* 130°F for mediumThis usually takes about 3 to 4 hours depending on size. Remove from oven and rest 20 to 30 minutes. For a crustier exterior, raise oven temperature to 500°F and return roast for 8 to 10 minutes before slicing.Slice against the grain and serve immediately
Make the Blue Cheese SauceIn a saucepan over medium low heat, combine:* Milk* Sour cream* Worcestershire* Dijon* JarlickWhisk until smooth and warm.Add:* Green onions* Blue cheeseStir until creamy and slightly melted. Season with salt and black pepper to taste. Do not boil.
