Wash, hull, and dice the strawberries into small pieces
Place the strawberries in a large mixing bowl
Add the strawberry Jell-O powder, honey, and fresh lime juice
Toss everything together until the strawberries are evenly coated and begin releasing some of their natural juices
Spread the mixture onto a parchment-lined baking sheet or transfer to a freezer-safe container
Freeze for 2-3 hours, or until the strawberries are chilled and slightly firm
Serve straight from the freezer as a refreshing snack or use as a topping for yogurt, ice cream, cheesecake, pancakes, waffles, or angel food cake
* For a lower-sugar version, use sugar-free strawberry Jell-O.
* The lime balances the sweetness and makes the strawberry flavor pop.
* Store frozen in an airtight container for up to 1 month.
