Place the cucumbers on a cutting board and gently smash them using a rolling pin, meat mallet, or the flat side of a large knife until they begin to crack and split
Cut the smashed cucumbers into bite-sized chunks and transfer them to a large bowl
Add the garlic, sugar, chili oil, olive oil, soy sauce, rice wine vinegar, sesame oil, and sesame seeds
Toss everything together until the cucumbers are evenly coated
Let the salad sit for 10-15 minutes to absorb the flavors
Finish with fresh cilantro and an extra sprinkle of sesame seeds before serving
Optional Add-Ins
* Crushed red pepper flakes for extra heat
* Thinly sliced green onions
* A squeeze of fresh lime juice
* Crispy chili crunch
* Thinly sliced jalapeños
* Crushed peanuts for added texture
