Make the Meatball Mix* In a large bowl, combine the ground beef, For the Sandwiches* 4 ciabatta rolls, hoagie rolls, or sturdy sandwich buns* 4 tablespoons basil pesto* ½ cup marinara sauce* 8 slices provolone or mozzarella cheese* 2 tablespoons butter, softenedOptional Toppings* Freshly grated Parmesan cheese* Crispy pepperoni chips* Hot honey* Fresh basil* Crispy fried onions
Prepare the Meatballs In a large bowl, combine the ground beef, Italian seasoning, garlic powder, salt, and pepper. Mix just until combined.Divide the mixture into 4 equal portions and gently roll into large meatballs.
Toast the Rolls Spread butter on the cut sides of the rolls. Toast on a griddle, skillet, or under a broiler until golden brown. Set aside.
Smash and Cook Heat a cast-iron skillet or griddle over medium-high heat.Place the meatballs onto the hot cooking surface and immediately smash them into thin patties using a burger press, spatula, or another heavy pan.Cook for 3–4 minutes on the first side until a deep golden crust develops. Flip and cook for another 2–3 minutes.
Add Sauce and Cheese Spoon marinara sauce over each smashed meatball patty and top with 2 slices of cheese. Cover the skillet for 1–2 minutes until the cheese is fully melted.
Build the Sandwiches Spread 1 tablespoon of pesto on the bottom half of each toasted roll.Place a cheesy smashed meatball patty on top.Finish with grated Parmesan, crispy pepperoni, fresh basil, or a drizzle of hot honey if desired.Top with the remaining half of the roll and serve immediately.
